Paul Cancalon, Ph.D.

Research Scientist

Dr. Paul Carncalon has been with the FDOC since 1990. In recent years, most of his activities have been devoted to the health benefits of citrus, including grapefruit juice drug interaction, and supervising the Florida Department of Citrus Health and Wellness Program.  He is responsible for maintaining relations with international organizations such as the Technical Committee for Juice and Juice Products (past chair), the European AIJN and the International Fruit Juice Union.

In the past, Dr. Cancalon conducted the research program to develop and publish new instrumental methods for detection of citrus juice adulteration and directed the FDOC product monitoring program.  

Dr. Cancalon holds a B.A. in Biochemistry from the National Institute for Applied Sciences (Lyon, France) and an M.A. from the Ecole Superieure d’Application des Corps Gras (Paris).  He earned his Ph.D. in Biochemistry in 1972 from the State University of New York at Buffalo.  Dr. Cancalon did post-doctoral research at Florida State University with L.M. Beidler (Olfaction) where he held a faculty position until joining the FDOC in 1990.
